Other than this kit and the ring/pinion gears, Is there anything else needed to do the gear swap? possibly a new gasket for differential cover? thanks

Check the outer wheel bearings and seals. I would recommend RTV for sealing the cover. The gaskets usually leak.

Looking to put new Ford Racing ring and pinion set on my factory ordered ecoboost, so it would probably only have a few miles on it. Would I still need this?

Yes, there is a chance that the bearings could be damaged during disassembly, you will need to reshim the rear and you will need a new crush washer.
